What is it

Citric acid is a weak tricarboxylic acid (C6H6O7), also defined as 2-hydroxy-1,2,3-propanetricarboxylic acid. It is found in citrus fruits of the Citrus genus, which gives it its name and which include lemon, grapefruit, orange, and all similar fruits, even in very high percentages (3-4% of the dry weight in lemon); in addition, citric acid is found in mushrooms, wine, and in some animal tissues. Easily soluble in water, citric acid is a white, odorless, colorless crystalline powder that can be found in two different forms:

Anhydrous citric acid

Anhydrous citric acid, the pure form obtained by crystallization from hot water

Monohydrated citric acid

Monohydrated citric acid, C6H8O7 H2O, the form obtained by crystallization from cold water, 90% active

Properties

Citric acid is a prominent product in the distribution of food additives due to its several properties:

It is an acidity regulator for both foods and drinks

It is a flavor enhancer and a flavoring

It is a chelating agent, capable of solubilizing metal ions and improving the absorption of iron

It is a preservative identified by the acronym E330, due to its antioxidant properties

Application sectors

As a food additive, the distribution of citric acid is required in many different sectors.

• In the beverage sector, as well as in the confectionery one, citric acid is used as an acidity regulator, to improve taste, and as a flavoring;

• In the dairy sector, citric acid is used to lower the pH of milk and act as a substitute for rennet in products for the vegetarian market;

• In the savoury sector, and in preserved meats, it is used as an antioxidant to slow down the oxidation of fats and therefore prolong the shelf life of the products.
