Agar-Agar is an important product in the distribution of food additives due to its high thickening and gelling power, which depends on the concentration used; it is sold as a preservative and stabilizer, identified by the acronym E406. One of the most particular characteristics of Agar-Agar is being thermoreversible, it gels at low temperatures but liquefies again if heated; it has very distant solidification and melting temperatures, since it gels below 40°C and melts above 80°C.
