What is it

Natural anethole has the chemical formula C10H12O; it is an unsaturated aromatic ether, whose most used isomer is trans-1-methoxy-4-(1-propenyl) benzene. In nature, it is the main component of the essential oil of anise and fennel, and it is responsible for their characteristic scent: it is extracted from natural sources. It appears as a colorless liquid already at 21° C of temperature, while below it has a crystalline appearance; it is hydrophobic but soluble in ethanol, a property responsible for the characteristic ouzo effect – from the name of the well-known Greek drink – which causes the formation of a milky emulsion when water is added to a drink containing it.

Natural anethole, identified by the acronym E450, is a prominent product in the distribution of functional food ingredients like many other flavorings. In addition to this, it is a very strong sweetener, 13 times sweeter than sucrose.

Application sectors

As a functional ingredient, the distribution of natural anethole is mainly requested in the confectionery sector, where it is used as a flavoring for sweets and chewing gum, in the bakery sector, where it performs a similar function in baked products, and in the beverage sector, where it is an essential ingredient in many drinks such as sambuca.
