Application sectors

As a functional ingredient, the distribution of oat fiber is required in many different sectors.

• In the dairy sector, in the production of soft cheeses, it acts as a humectant to retain water, and in grated cheeses in bags it acts as an anti-caking agent;

• In the bakery sector it is used in the dough of dry baked goods, such as meringues, wafers and biscuits, to create a reticular structure during cooking that increases the rigidity of the product and prevents it from breaking.

• In the savoury sector it is used in meat-based doughs to bind the other ingredients together, and as an anti-caking agent in spices;

• In the nutrition sector, it is used due to its ability to reduce cholesterol levels and increase fecal mass in the intestine.
