What is it
Maltitol is a carbohydrate, identifiable as a polyalcohol. Although it is present in nature in some fruits and vegetables, it is obtained by catalytic hydrogenation of maltose syrup, in order to open one of the two rings and originate an alcoholic disaccharide composed of glucose and sorbitol.

Maltitol is an important product, identified by the acronym E965, in the distribution of food additives due to its several properties:
High sweetening power, equal to more than 75% of sucrose (or common sugar)
Low calorie content, equal to 50-75% of that of sucrose (2-3 Kcal, compared to 4 of common sugar)
Low glycemic impact
Absence of unpleasant aftertastes
Slowed metabolism by the body, without glycemic peaks
Lack of metabolism by oral bacteria, which makes it acariogenic (i.e. not linked to the formation of dental caries)
Application sectors
As a food additive, the distribution of maltitol is required in many different sectors with the same function, the ones of a sweetener with a low calorie impact. In addition to this, its characteristic of not generating glycemic and insulin peaks in the blood means that it is often defined as an excellent “sugar for diabetics”. These details make it highly required as a sweetener in the bakery, confectionery, dairy and nutrition sectors.
