What are they

Maltodextrins are a complex water-soluble carbohydrate, a polymer of dextrose that is obtained, at an industrial level, through a controlled enzymatic hydrolysis of corn starch. Our maltodextrins are extracted from strictly non-GMO corn, and are available in different grain sizes and in two different dextrose-equivalence values: DE 12 and DE 18.

Properties

Maltodextrins are an important product in the distribution of functional food ingredients due to their several properties:

They are a source of energy

They are a thickener

They reduce the sweetness degree of foods

Application sectors

As a functional ingredient, the distribution of maltodextrins is required in many different sectors.

• In the bakery sector, in limited doses, they are used as a filler ingredient to complete recipes;

• In the confectionery sector, in products sweetened with stevia where the need for sucrose is very limited and the recipe must be completed, they are used to lower the sugar content and obtain products that do not cause tooth decay;

• In the beverage sector, they are used as a thickener, similar to agar-agar and carrageenan, to give thickness to aqueous drinks;

• In the dairy sector, maltodextrins are used to lower the freezing point of ice cream, in order to keep it softer;

• In the savoury sector, they act as adjuvants and carrier agents for active ingredients in functional mixes.

• In the nutrition sector, they are used in products intended to provide a dose of energy with gradual release to the athlete, with timing dependent on the DE level. They can be taken either alone or in formula with other carbohydrates.
