Polyvinylpolypyrrolidone is an important product in the distribution of food additives; it is sold as a stabilizer (identified by the acronym E1202) due to its highly agglomerating nature. In fact, it is able to bind to various substances such as tannins and polyphenols, creating a colloid, which precipitates and can then be removed by filtration.
