What sodium alginate is

Sodium alginate is the sodium salt of alginic acid, and has the chemical formula NaC6H7O6. The production process involves the extraction of a specific viscous liquid from the cell walls of brown algae of the Pyrifera macrocystis and Ascophyllum Nodosum species; once the substance called Algin (a name often used also for the finished product), or alginic acid, it is salified, thus obtaining sodium alginate.

The properties of sodium alginate

Sodium alginate, identified by the acronym E401, is an important product in the distribution of food additives due to its numerous properties:

It is a cold gelling agent, when it comes into contact with a calcium solution

It is stable at high temperatures and in acidic environments

It is an emulsifier

The sectors of application of sodium alginate

As a food additive, the distribution of sodium alginate is required in different sectors.

• In the beverage sector it is used as a thickener for those drinks that must be subjected to high temperature sterilization, since it is not damaged;

• In the confectionery sector it is used to thicken fruit-based preparations similar to jams that are used in many packaged desserts, since it remains stable in the acidic environment they constitute;

• In the dairy sector, due to its resistance to acidic environments, it is used as a thickener in fruit ice cream; It is also used in the production of some processed cheeses and cream cheeses, and in other milk-based preparations such as yoghurt and industrial puddings.

• In the nutrition sector, it is used to modify the consistency of some dietary products to increase the feeling of satiety they provide.

• In the savoury sector, it is found as an additive in canned vegetables and fish, in bouillon cubes, and in mayonnaise.
