What sorbitol is
Sorbitol is a six-carbon alcohol, identifiable as a polyalcohol and therefore similar to common carbohydrates, very similar to maltitol. In nature it is present in pears, apples, cherries and peaches, but more often it is obtained by synthesis from potato starch, by reducing glucose. It has the appearance of a white, colorless powder, but can also be presented in liquid form.

Sorbitol is an important product, identified by the acronym E420i, in the distribution of food additives due to its several properties:
High sweetening power, equal to 60% of sucrose (or common sugar)
Low calorie content, equal to 60% of that of sucrose (2.6 Kcal, compared to 4 of common sugar)
Stability at high temperatures
Slowed metabolism by the body, without glycemic peaks
High hygroscopicity, which makes it an excellent wetting agent
The application sectors of sorbitol
As a food additive, the distribution of sorbitol is required in many different sectors with the same function, that of a sweetener with a low caloric impact. In addition to this, its hygroscopic characteristic often makes it selected as a humectant in soft desserts, to retain water molecules in the dough, extending the useful shelf life of the product before it becomes stale and hardens.
